Feral, fermented botanical drinks from the Dolomites.
The word "Feral" means "wild, untamed – specifically referring to an animal or a domestic plant that has returned to a wild state."
Behind Feral is a small community of passionate people who are not afraid to leave the traditional path to venture into unexplored territories, daring to challenge the status quo and embracing a certain level of discomfort in the name of freedom.
This is how they designed their brews: non-alcoholic fermented botanical drinks, ideal for food pairings.
They are made from humble and forgotten ingredients like beetroot and gain a new dignity through lactic fermentation and the infusion of roots, spices, and wood to create a new, multidimensional taste experience.
The final drink is complex, spicy, lingering, and no, it doesn't taste like the earthy beetroot served in a school cafeteria.
Feral 5 - Birch sap, chokeberry, verbena, nettle, yarrow, and horseradish
A dry, natural sparkling rosé where the bubbles bloomed directly in the bottle.
No beetroot base this time, but birch sap which transforms into a fine and delicate effervescence.
What you will discover on the palate:
- A gourmet and lively bubble
- Notes of citrus, stone fruit, and a unique herbaceous freshness.
- A light haze, subtle sediments: the authentic signatures of an ancestral fermentation.
Between order and disorder, tradition and audacity, Feral N°5 writes a new page in taste.
Pairings: aperitif, with crunchy raw vegetables or tempura
