This is how they designed their brews: non-alcoholic fermented botanical drinks, ideal for food pairings.
They are made from humble and forgotten ingredients like beetroot and gain a new dignity through lactic fermentation and the infusion of roots, spices, and woods to create a new, multidimensional taste experience.
The final drink is complex, spicy, persistent, and no, it does not taste like the earthy beetroot served in the cafeteria.
Feral Rouge N°3 - Red beet, black pepper, thyme, oak
Feral Rouge N°3 is rich and full-bodied, with a strong presence of acidity and tannins. The vivid red color comes from the fermented beetroot and wild blueberry, enhanced by black pepper and thyme.
