“Awa” (泡), which means “bubble” in Japanese, embodies a delicate and refined effervescence here. This creation offers a subtle gastronomic experience, halfway between vegetal freshness, vinous structure, and aromatic depth.
The red shiso, organically grown directly in the producer's fields, is harvested at peak maturity throughout the summer season. This complete control, from field to distillation, ensures exceptional quality and aromatic precision.
The sweet balance comes from freshly pressed raw cane sugar, sourced from the Japanese island of Kikaijima. Its unique terroir, rich in minerals thanks to its uplifted coral reefs, brings a singular umami dimension to the blend.
The structure and tension are provided by a rigorous selection of grape varieties from two distinct terroirs, giving this cuvée a truly vinous, elegant, and harmonious signature.
Nose: Fresh and vegetal, dominated by herbaceous and green notes, with a lovely vivacity brought by fresh shiso.
Palate: Balanced and complex, mingling subtle fruity notes (cherry, flower), a touch of roundness, and spicy nuances of black pepper.
Finish: Long and structured, marked by notes of pandan, brioche, and wood. The tannins provide a light, refreshing astringency that extends the tasting experience.
